Fajitas aren't bad for you, it's what we put ON the fajitas that is bad, namely sour cream, guacamole, and cheese. If you stick to the fried onions and peppers that come with the fajitas, and add maybe some tomato or tomatillo salsa, and leave it at that, they're pretty healthy. If you ask for corn tortillas instead of flour, they're even healthier (flour tortillas are made with lard or shortening). The fried chips you had as an appetizer, however, probably had much more fat than anything you could have put on your fajitas.
